Our OystersSpéciales “l’Exquise”
A careful, considered production for a truly “exceptional” oyster. Raised between two terroirs: the Norman coast and Charente-Maritime.
It begins life on the spat-collecting leases of the Charentais pertuis, covered and uncovered by the tides.
Nine months later, it is transferred to Utah Beach, into its tumultuous, phytoplankton-rich waters, for a period of two years.

Once the desired meat content and size are reached, it is time to return to the source: our calm, freshwater clay ponds for finishing in Charente-Maritime.
Our oyster completes its maturation for three weeks or more.
Spéciales “l’Exquise” features a regular shape, compact white nacre, firm and crunchy texture with rich, generous flesh, a fine balance of briny and sweet, and a long, lingering finish.
